The symbol of the typicity in Valpolicella. A ruby red colour with garnet tints and intense aromas of cherry and wild berries. Dry and well-bodied to the taste, thanks to the particular aging process, that includes 18 months in cement tanks for half of the total quantity and 18 months in big barrels for the remaining half. This wine is the perfect accompaniment to red meat and roasts.

Production technique
The grapes are harvested in the fifirst ten days of October.
Wine-making process
De-stalking and gentle pressing in November. Maceration lasting approx. 10 days during which time manual punching down and pumping over is carried out. Fermentation temperature: 18-20°C. After being drawn off, half of the wine is transferred into cement tanks for 18 months and the other half in big barrels for the same period, after which the wine undergoes further ageing in the bottle.
